Tampa Food Truck Rally - Take 2!

Finally! Tampa is jumping on the Food Truck craze and this past Saturday was the second Food Truck Rally.

I was unable to make the first one, which took place back in September but I did hear it was a total success.  So much so that there was a much higher turnout that was planed, some 3,000 people, who waited more than an hour to buy from 10 vendors who soon ran out of food.  

Not a good start.

So, I was a bit apprehensive about this time around, and hoped that the event planners as well as the participating food trucks learned from their past mistake and were a bit more prepare.

GCC: Coconut Rice Fingers

We continue the rice theme in the Gutsy Cooks Club.  This week it was to “make it sweet “ and the options were so good, that it was very hard to narrow it down to just one.

I’m a die-hard fan of rice pudding – side note: one day I will post my mother’s rice pudding in order to put all the other puddings to shame out there – Of course I will do this as soon as get her to share the recipe.

But, back to rice pudding.  If you see the options, all were a variation of rice pudding.  And boy did I want to make each and everyone one of them.  It really came down between the Rice Pudding ice pops (hello!! Rice Pudding Ice Pops… show me a person that would not be jumping up and down for one of those) and the intriguing Coconut Rice Fingers.

Baumkuchen or Schichttorte

I read a lot of my fellow food blogs.  I really don’t have any particular preference when it comes to putting them on my reader.  But I do tend to gravitate towards those food blogs that have beautiful photography and out of the box creativity when it comes to making recipes.

So, it’s no surprise that when I ran into Sandra Mangas web page – “La receta de la Felicidad” I was immediately in love with her photography and the creativity of her recipes blew me away.  She is fun, and wimsy and her recipes are delicious too.
