The story of the Leeks, Rice, Peas and ham jumble and an Egg to boost

See that picture above, that is what you get when your body craves something and you raid your refrigerator and get a “healthy” talk from your boyfiend.

This past weekend I was all set to bake the last cake for my Heavenly Cake Baker club.  Instead I ended up in bed for 4 days, going mano-a-mano with a nasty cold.

Today, I decided to stay home instead of spreading the joy around work, because karma will eventually beat me up and those germs will travel around the place and end up back in my system.

So I played nice.

My day consisted in using a whole box of Klennex, taking cough medicine, sleeping it off the before mentioned medicine, and between wakes up watched a unhealthy amounts of episodes of the “Amazing Wedding Cakes” show on WE network.

Don’t you judge.  I learned to make bows, boxes, tall skyscrapers out of pastille and perfect fondant circles.  Let’s call it educational hours ‘k.

During my comatose period, I drank lots of water, juice, ate a piece of cheese, crackers, then melted the cheese on the cracker and called it mini-pizza, had a coke, some ice tea, more cheese, more crackers and I think I may have had a cookie.

By 4pm I was feeling my body retaliate and started to crave stuff.

Do you see the pattern here?  Apparently my body wanted junk and wanted it now.

Tom came home and caught me red handed. And boy did we go off.

“That junk is not going to make you feel good”

“I’m sick” (my universal get-out of jail card, if I say so myself)

“You still going to regret it” (why does this man know me so well?)

“But, I’m sick and can’t taste anything, what are you going to eat?”

“I’m going to make rice and warm up the left over thai”

RICE!

Oh, I wanted rice; I started to crave it, like it would be my last dying wish.

So Tom started on the rice and I started to want stuff on the rice.  I went hunting in my refrigerator and out came out the butter, some Parmesan cheese, two leeks, ham and some peas.

Apparently my body took over my mind.

And this is how I ended up with a quick sautéed of leeks, ham, and peas over butter, with some balsamic vinegar and topped with some Parmesan cheese.

Once the rice was ready, I dropped a quick spoonful over my vegetable medley and gave it another quick stir.

Into a bowl it went.

And it was delish…

Except!

…it needed something to make it a bit creamy.

Enters the Egg.

Fried egg to be precise.

And after the first taste, my body sang.

I hate when my boyfriend is right.

I think I may have found the cure for the common cold.

I could give you the recipe, but this was a spur of the moment, so basically I just took some butter (about 1-2 tablespoons) and melted it on a pan, over medium high heat and added the chopped leeks (two), then the peas (about a handful), then chopped up about 2 slices of ham and added that as well, cooked it down until the leeks were nice and soft, added a sprinkle of balsamic vinegar and some olive oil and stir it again. Seasoning it with salt and pepper along the way.  Turned off the stove and then added some grated Parmesan cheese (again an handful) over it and mixed it some more.  When it came to the egg, it was just a plain, fried egg with a bit of butter.  As far as the rice, it was plain white rice.

I’m thinking this can be used in so many variations too.  Instead of the egg, added a bit of cream to the mixture and pouring it over pasta.  Or it will probably go well over some grilled chicken, or even pork chops.
