Kiwi Boat topped with Lobster and Scallion Mayonnaise Amuse Bouche

When I received the invitation to participate in the Progressive Party that Kitchen Play is hosting I jumped at the change.  Who would not?  It’s pretty simple; six bloggers take to the stage with a challenge of incorporating a sponsor product into a blog post.  Each of us is assigned a course, and we are all given the green light to experiment and create a recipe that will showcase the host product and/or kitchen tool.

Our progressive party is being sponsored by ZESPRI® Kiwifruit.  ZESPRI international is the world largest marketer of Kiwifruit, selling this fruit into more than 60 countries. When I read about what this company stands for, I was excited to work along side them to showcase their product.  Who would not want to align themselves to a corporation that strives to use the best practices in all of their processes in order to become a sustainable business and a market leader in the industry? GCC Menu 17 - Spicy Shrimp Gratin

This dish has been on the making since Friday night.

I bought the shrimps on my way home from work, with every intention of making it for Friday night dinner.

Tom was totally excited, since he has been craving shrimp for a bit now.

I got lazy on Friday night and totally talked my way of not doing it. Instead, I convince him to have dinner at the Cheesecake Factory, in honor of celebrating his first day at his new job (he has been looking for a job for the past 4 months - so it was a celebration!). And  promise him that we were going to have it for lunch on Saturday.

Shrimp in Red Curry – Thai Style

I love Thai food.  And there is nothing that I love more in that cuisine that their Red Curry. But, then, I love anything that has coconut, or coconut cream or coconut milk - That is why my signature cake is a coconut cake – but let’s leave that one for another day in another post.

But, simply put, if it has coconut, I’m going to dig in and try it.

When I lived in Miami, I had a favorite Thai restaurant, called appropriately “The Thai House”, it was only a couple of blocks from my apartment in North Bay Village, over the bridge into North Miami Beach.  This place was a bit out of the way; right on the causeway and only the local folks knew it was there.  It did not stop them from having a pack house every night.
