GCC: Menu 30 - Chicken Pot Pie

I think our fellow Raymond is reminiscing a bit his childhood with the options he has given us while hosting this months Gutsy Cook menus.  Not that I mind one bit.  Seriously, who can say no to chicken pot pie?

I usually don’t, specially when I go and order it in any restaurant that has it on the menu.  I have been holding off in making it at home, because it just seems like a long difficult dish to make.

But, I’m going to prove to you how wrong I was on that assumption and tell you that in less than 1 hour you can serve this to your family.  First the recipe is made with puff pastry and not pie crust, so you can just go out to the supermarket and get one of those frozen packages, that are just as good a homemade but without the hours upon hours of preparing it.  And while you are there, stop by your supermarket deli and pick up a roast chicken.

See? The most difficult time consuming part of the recipe is DONE.

HCB: Southern (Manhattan) Coconut Cake with Silk Meringue Buttercream

I’m going to make this post short and sweet, because guys I’m exhausted.

I mean like really, really worn-out.

My new job, which I love, is really taking a lot out of me, not only mentally but physically as well.  I come home every day of the week and all I want to do is jump in the bed and put the world on hold until the next day when I have to do it all over again.

And I know that I been absent the last couple of rotations from the group, but this weekend this cake was not going to be passed by.

First coconut cake – HELLO is the Holy Grail at my house.  Besides my Tres Leches, this is the second “signature cake” that my family is always asking for.  I was intrigue in Rose’s take on it, so it was going to be made period. I started late on Saturday night after a full day of running errands all over town.  The game plan was to make the cake and then on Sunday finish off with the crème anglaise and the buttercream.

ABC: Zebra Cookies

We are back to our monthly ABC choice.  This time it was cookies.  Out of all the desserts out there cookies are not high on my list of likes (not like fruit desserts), unlike Tom and the little man that love them.

Since we been eating cake for the past months, this was a change of pace, and was looking forward to them.  Plus as soon as I said cookies were in the baking list over the weekend, the house erupted in cheers.

Me thinks there was an itsy-bitsy hint in there somewhere…

Once more I wish that this book would have more pictures with it’s recipes, it’s hard to “visualize” the end product and while Flo’s instructions are super detail, sometimes it’s just too much and I get lost in translation with them.

I had to read the steps more than a couple of times before I fully comprehended how to set the dough up in order to have them come out with the perfect zebra stripes.
