Esquites - Mexican Corn Street Salad

You all know by now my love affair with corn. So you can imagine that when summer arrives around these parts and the BBQ season starts, I’m giddy with excitement of all the corn that is going to show up.

If there is one country that knows how to eat corn is Mexico.  Anywhere you go you will find carts in every street corn selling something made with corn and where there is corn there is this dish called Esquites.  It’s a snack and the word comes from the Nahuatl word izquitl, which translates to “toasted corn”.

Chica Brunch a la Picnic Style

For the past couple of weeks, the weather god are showing us what our summer is going to feel like, and, well… we are going to melt again this year - its going to be HOT.

But they have been a bit kind in the transition.  We have gotten sunny days in the high 90’s but with the added bonus of breeze days and very little humidity.  Those perfect days of summer, when all you want to do is sit under a canopy of trees and just be.

GCC: Fruit Stuffed Pork Loin

This past weekend I had every intention of doing this dish, except that I spend it running around doing errands and Saturday dinner turned into pizza.

Instead I decided, I would do it for Sunday’s dinner.

Sunday came and went and back in the refrigerator everything went. But, I made a mental vow that I was going to do this for our Monday night dinner no matter what.

I had doubts that this was going to work out for a quick meal, but once more, I realized that there is always a way.  And in less than 1 hour, I had it on the table for us to dig in.
