Banana Cake with Mocha Frosting and Salted Candied Peanuts

When we arrived last Monday from our Mexico vacation, both Tom and I were holding each other up – yes, were relaxed and loosed and ready to take on the world.  But having just spent most of the day traveling in ferries, transfer buses and planes, by the time we walked in our house, we were exhausted.

We both called our respective work and told them we were going to take the day off.

And we slept.

A lot.

Actually, he slept more than I.  Because, my body knows that when I have plenty of time to oversleep, my internal wake up alarm kicks in and there is nothing that stops me from waking up and not being able to fall back to sleep.  I usually go nuts trying to accomplish this, until I simply give up and get out of bed.

Then I walk around antsy all day.

HCB: Many-Splendored Quick Bread

See the title up there?

The key word is “quick”.

This bread is super quick, as in get everything ready and then, boom, before you know it it’s in the oven and driving you crazy with heavenly smells.

At least that is what happen when I decided to make it this past Friday.

Yep, you read it right, this past FRIDAY.  As in, after a long day at work, I got to baking.  Can you tell I had a hard week?

Baking, my anti-drug.

And this was the perfect prescription.

TWD: Lots-of-Ways Banana Cake

It’s funny how sometimes both of my baking groups (Heavenly Cake Bakers and Tuesday with Dorie) are in synch and totally random pick a recipe that shares a common ingredient.  Sometimes the recipes are so close that I have to make an executive decision and choose which one I want to bake more.  No sense in having 2 cakes in the house, especially when I try to get rid of it as fast as I can in the first place – no temptation in sight!

This past weekend Tuesday with Dorie choice won.  Thank you to Kimberly from Only Creative Opportunities who made the choice.

And what a choice it was.

This cake was very simple to make (the best kind) and as Dorie explains very flexible. Since you pretty much can replace any of the ingredients with what you have at hand – which in my mind means one thing:

No trip to the supermarket to find an ingredient that I ran out and forgot to put on my shopping list.

Have I mentioned how I hate to go to the supermarket?

No? Well now you know – your welcome.
